Origin

Ipanema, Brazil has been producing coffee since 1969. Stretching over 4500 hectares the area is composed of five main farms, all of which are located in the Sul de Minas region of Brazil. 70% of the land is devoted to coffee growing and production; the rest of the area is dedicated to conservation initiatives. The people of Ipanema use this conservation land to cultivate sustainable Eucalyptus trees, which are grown to ensure that they have a natural fuel source available for the coffee drying process.

Unsurprisingly, Ipanema is one of the largest employers in the area and offers around 2,000 jobs during the peak harvest time, in addition to its 300 regular jobs. The workers enjoy many benefits such as free distribution of soy milk, food staples, a medical plan, transportation and lodging.

Ingredients

These Ipanema coffee beans are called Catuai, which refers to a Hybrid created in the 1950’s of Mundo Novo and Caturra. The aim was to create a coffee that would grow relatively short with lateral branches forming close angles with the primary branches. Thus ensuring that the fruit rarely falls from the tree. This is favourable when weather conditions can be changeable.

Recommended preparation

We suggest you use a Chemex type pour over method top brew this coffee. This brewing methods really help to bring out all of the sweet, buttery cup characteristics.

We use around 18g of coffee to 300ml of water for a mug.
